Darin Detwiler
Northeastern University

What do today’s consumers know, want, expect, or assume?  How does the food industry respond to the changing forces in a consumer-driven market?  Join Darin Detwiler for a look at case studies that highlight the evolving landscape of food.

Darin Detwiler teaches the Regulatory Affairs of Food Industry at Northeastern University in Boston, MA.  His work in food policy spans over 20 years – including two terms as a regulatory policy advisor to the USDA, FDA collaboration as a Food Science Educator, and work with legislators, media, and industry.  He serves as the Senior Policy Coordinator for Food Safety at STOP Foodborne Illness, a national non-profit agency regarded by the FDA as a game changer in the food industry.  Darin’s current efforts include collaboration with policymaking for the FDA Food Safety Modernization Act (FSMA) final rule adoption. His works have been published in numerous newspapers and industry journals.

Michael Murphy graduated from the University of Maine in 1996 with a bachelor’s degree in aquaculture science.  After working for several years in the aquaculture industry, Michael returned to the University of Maine and earned a master’s degree in food science and human nutrition in 2000.  Michael has more than 10 years of experience in Maine’s food industry, specializing in quality assurance as well as research and development management.

Aroma/odor characterization is one of the most demanding analytical challenges.  Many of the aroma/odor compounds have extremely low odor threshold concentrations (in the parts per billion and lower ranges).  When these compounds are present in a sample, they may be masked by numerous other volatile organic compounds that are found in the headspace.  The talk will present an analytical approach that is effective in solving aroma and odor issues and thus protecting product quality.




Roger Bleiler, Ph.D., joined MOCON in 2010.  In his role as senior scientist, he has been responsible for performing aroma / off-odor analyses using the technique of multi-dimensional gas chromatography, mass spectrometry and olfactometry (MDGC-MS-O).  He has also performed permeation testing using various organic compounds as the challenge material.

Prior to joining MOCON, he was a specialist in secondary ion mass spectrometry (SIMS) services with the Evans Analytical Group.  There, he performed high quality surface analysis in various areas of semiconductor processing.

Bleiler has a Ph.D. in chemistry from The Pennsylvania State University and a Bachelor of Science in chemistry, minor in mathematics from Moravian College.  He is also a member of the American Chemical Society, ASTM Member E-18 and the Society of Sensory Professionals.  Bleiler has published numerous articles in a variety of peer-reviewed journals.

He lives in Metropolis, IL with his wife Heather, and their three budding vanilla connoisseurs Elizabeth, Natalie, & Gabe

Pathogen testing of food matrices poses unique challenges due to the variety and complexity of different food types.  Certain types of foods are particularly challenging to test, for example, spices, dark chocolate and pet food.  The unique needs of these food types may require labs to perform specialized sample processing, which could lead to longer turnaround time or added cost to the client.  In the worst case, challenging matrices may lead to inaccurate results, which could have far reaching impacts on food manufacturers.  In this seminar, we identify some challenging matrices, discuss the potential issues they may cause, and outline some of the ways that these challenges can be overcome.


Ted Andrew is currently Director of Product Marketing at Roka Bioscience where he manages the marketing and product launch of Roka’s solutions to the food industry.  He spent ten years as a microbiologist and molecular biologist in a number of biotech companies including Cubist Pharmaceuticals, Paratek Pharmaceuticals, & Ortho-McNeil in anti-infective research.  After leaving the laboratory, he served as Director of Technical Applications for New Brunswick Scientific in the bioprocess and laboratory industry. He holds a B.S. in Microbiology from Penn State University.
